What To Plant In February

Winter is a challenging time for a gardener, especially gardeners living in states dealing with frigid temperatures and frozen grounds. But, don't let the snow fool you; there are many types of plants to grow in February that can begin indoors or in greenhouses.

Vegetables

Some vegetables to plant in February include: tomatoes (in warmer conditions), celery, Brussels sprouts, eggplant and lettuce. You may also begin to plant cauliflower and broccoli as well as peppers - a deer-resistant plant. 

Fruits

Start planting berries in February to enjoy later in spring and summer. Fresh fruit to begin planting include: watermelon, cantaloupe and strawberries. Now is a good time to prepare pumpkin seeds in the garden because the seeds take so long to mature. 

Herbs

The best herbs to plant in February include: basil, parsley, thyme and sage. (Think poultry, soups and Italian food meals!) Deer do not like eating some of these herbs and can be a nice barrier from deer. 

Flowers

Start planting geraniums, violas, impatiens and snapdragons inside. The seedlings will need gradual outdoor exposure before they can move permanently outdoors to mature. Begonias and dahlias can bloom in pots of moist compost and covered until warm weather arrives.
